Filming on location in France during the 1999 Cannes Film Festival, Henry Jaglom goes behind the scenes to explore how movies get made (and unmade). He would know--he's been making them for decades now. In this one, he takes an Altman-meets-Cassavetes approach to his subject. Equally obvious is the fact that Evolution is a ! de facto rip-off of Reitman's 1984 classic Ghostbusters! , but th is time there's no Bill Murray to deliver the best punch lines (we have to settle for fellow ghostbuster Dan Aykroyd in a broad supporting role), and the comedy has devolved into a grossfest including deep-rectal extraction of alien insects, fire-hose enemas into a giant alien sphincter, and a full-moon display of David Duchovny's naked posterior. Whereas Ghostbusters was a shrewd, irreverent mainstream comedy that combined gooey spectral ectoplasm with something resembling genuine wit, Evolution is a crude, juvenile romp in which all things slimy are elevated to comedic supremacy.

Granted, that's not always a bad thing. As latter-day ghostbuster equivalents, Duchovny, Orlando Jones, and Seann William Scott make a fine comedic trio, and Julianne Moore is equally amusing as a clumsy scientist and Duchovny's obligatory love interest. Despite the meddling of clueless military buffoons, they join forces to eradicate a wild variety of rapidly evolving alien cre! atures that arrived on Earth via meteor impact, and the extraterrestrial beasties (courtesy of effects wizard Phil Tippet and crew) are outrageously designed and marvelously convincing. For anyone who prefers lowbrow humor, Evolution will prove as entertaining as Ghostbusters (or at least Galaxy Quest), while others may lament Reitman's shameless embrace of crudeness. All of this is rendered in cheeky, fleet-footed style--the movie doesn't lecture, or make you feel you're being fed something that's good for you. The animation is miraculous, a lush forest in which nature is a constantly unfolding miracle (even in a spectacular fire, or those dark moments when "man was in the forest"). There are probably easier animals to draw than a young deer, and the Disney animators set themselves a challenge with Bambi's wobbly glide across an ice-covered lake, his spindly legs akimbo; but the sequence is effortless and charming. If Bambi h! imself is just a bit dull--such is the fate of an Everydeer--h! is rabbi t sidekick Thumper and a skunk named Flower more than make up for it. Many of the early Disney features have their share of lyrical moments and universal truths, but Bambi is so simple, so pure, it's almost transparent. You might borrow a phrase from Thumper and say it's downright twitterpated. --Robert Horton

When an eccentric millionaire offer a group of opposites $1,000,000 to spend the night in a so called "Haunted House" with a murderous past, they figure it is a quick way to get quick money and leave. All of them are sure it is some made up story just to mess with their heads a little and test their courage. But, once they stay in the house they start to think about the mistake they made in coming there when mysterious things start to happen.House on Haunted Hill is one of the new breed of waste-no-time thrill machines, like Deep Blue Sea, and a particularly effective example at that. The plot is pure contrivance: For a party stunt, a wealthy amusement-park manufacturer (Geoffrey Rush) offers five people a million dollars if they spend the night in a former insane asylum where the patients! murdered the sadistic staff. But it turns out the five people who arrive aren't the five he invited--did his wife (Famke Janssen), who hates him, make the switch? From there events unfold with a smart combination of human and supernatural machinations; spooky jolts are dispensed at regular, but not entirely predictable, intervals. The visual effects owe a considerable debt to Jacob's Ladder, a much more ambitious movie; House on Haunted Hill just wants to get under your skin, and succeeds more than you'd expect. Rush is his entertainingly hammy self; Janssen, Taye Diggs, Ali Larter, and Bridgette Wilson are attractive and reasonably straight-faced about it all; and Chris Kattan is genuinely funny as the house's neurotic owner. Some elements of the plot seem to have been lost in the editing process, but it hardly matters. More bothersome is that the scares go flat when computer effects take over at the end--the digital images just aren't as creepy as the more! suggestive stuff that came before. But that's just the very e! nd; most of the movie has a lot of momentum. Watch until the end of the credits for a final bit of eeriness. --Bret Fetzer

GRACE OF MY HEART - DVD MovieThe traditions of old-fashioned melodrama are given a hip facelift in this homage to the Brill Building era (the late 1950s to the early 1970s) of pop-music glory, providing a perfect match between writer-director Allison Anders and her excellent cast. Illeana Douglas plays a singer-songwriter (loosely modeled after Brill recording artist Carole King) whose life runs emotionally parallel to popular music trends. John Turturro is a stand-in for "wall of sound" producer Phil Spector and Matt Dillon is a thinly disguised version of maverick Beach Boy Brian Wilson. It's a bit too schematic in the way the central character is always in the right place at the right time, but as a tale of fame and romantic highs and lows in the '50s and '60s the movie is funny, touching, and sincere. It's a lively and loving tribute to timeless! music and the colorful characters who created it. --Jeff Shannon A terrific sampler of greatest hits from the heyday of girl groups and the Brill Building--except that none of the songs are actually from that era. What we have here is an incredible simulation--from Allison Anders' unjustly overlooked 1996 movie about the tempestuous life and career of a Carole King- like singer-songwriter (the magnificent Illeana Douglas) who spends years writing for others before finding her own voice. But instead of just licensing the old Shirelles' recordings of Goffin-King hits, the filmmakers came up with the brilliant idea of doing original songs by combining the sensibilities of contemporary artists and their songwriting forebears. So, for example, Elvis Costello and Burt Bacharach teamed up to write and perform the power- ballad "God Give Me Strength" (although I wish they'd also included Douglas's even more moving version from the picture); Leslie Gore te! ams with Larry Klein and David Baerwald for "My Secret Love" ! (perform ed by Miss Lily Banquette of Combustible Edison); Gerry and Louise Goffin team with Baerwald for "Between Two Worlds" (performed by Sean Colvin); J. Mascis of Dinosaur Jr. writes and sings some Brian Wilson/Beach Boys-type stuff ("Take a Run at the Sun," "Don't You Think It's Time"), and so on. Buy the record; see the movie. Illeana Douglas plays a singer-songwriter (loosely modeled after Brill recording artist Carole King) whose life runs emotionally parallel to popular music trends. John Turturro is a stand-in for "wall of sound" producer Phil Spector and Matt Dillon is a thinly disguised version of maverick Beach Boy Brian Wilson. It's a bit too schematic in the way the! central character is always in the right place at the right time, but as a tale of fame and romantic highs and lows in the '50s and '60s the movie is funny, touching, and sincere. From there...well, there's lots of atmospheric cinematography, regular jolts of loud music, and many quick edits. What actually happens is pretty obscure and, really, not worth unobscuring. The obsession with doors and doorknobs verges on the avant-garde. When Betsy (Kirsten Dunst) and Arlene (Michelle Williams) run into a shady figure in the stairwell of Arlene's Watergate apartment building, little do they know they've stumbled upon G. Gordon Liddy (Harry Shearer) on the night of the Democratic National Headquarters break-in. Later, on a White House field trip, they wind up meeting with Nixon himself (Dan Hedaya), who, to ensure their silence, decides to make them official White House dog walkers and "secret youth advisors." Of course, Betsy and Arlene soon find out their idol has feet of clay, and ultimately decide to aid "radical muckraking journalists" (and queasy rivals) Woodward (Will Ferrell) and Bernstein (Bruce McCullough) in their investigation. Fleming and cowriter Sheryl Longin's enfolding of the Watergate scandal is extremely clever and inspired, from Arlene's 18-and-a-half-minute declaration of l! ove on Nixon's tape recorder to the Hello Dolly cookies (laced! with a certain herbal stimulant) that help bring about the U.S.-Soviet accord. And after all the angsty-serious portraits of Watergate, it's bliss to see the prime players sent up mercilessly; in addition to Shearer, the cast boasts Dave Foley (Erlichman), Jim Breuer (John Dean), Saul Rubinek (Kissinger), and Ana Gasteyer (Rosemary Woods), all in fine form. Hedaya's Nixon, dead-on but never parodic, is an Oscar-worthy comic turn, and Dunst and Williams invest their characters with affection and humor; the success of the film lies in the way these talented actresses make us laugh with Betsy and Arlene, never at them. Don't be put off by the teen sheen on this comedy--it's also for all of us who still remember Watergate even after 25 years, and still love dancing on the scandal's grave. --Mark Englehart

Very quickly after meeting Gabrielle Hamilton, I understood why she was a terrific and much-admired chef. I knew that her restaurant, Prune, was ground-breaking, that she seemed to have come out of nowhere, instead of being a product of the "system" (she'd emerged from the invisible subculture of catering), to open one of the most quirky, totally uncompromising, and quickly-embraced restaurants in New York City. Her purportedly (but not really) Franco-phobic menus were intensely, notoriously personal, her early embrace of the nose-to-tail attitude was way, way ahead the times, and chefs--all chefs--seemed to like and respect her. Almost as quickly, it became apparent that this chef could write.

Short pieces appeared here and there over the years and they were sharp, funny, incisive, unsparing of both author and subjects--straight to the point and pretense-free, like Hamilton herself. She could write really well. And she had, from all accounts, ! a story to tell. So when it was announced that Blood, Bones, and Butter was in the works, I was very excited.

It was a long wait.

Five years later, I finally got my hands on an advance copy and eagerly devoured it. It was of course brilliant. I expected it to be. But I wasn't prepared for exactly how goddamn brilliant the thing was, or how enchanted, difficult, strange, rich, inspiring and just plain hard her life and career--her long road to Prune--had been. I was unprepared for page after page of such sharp, carefully-crafted, ballistically-precise sentences. I was, frankly, devastated. I put this amazing memoir down and wanted to crawl under the bed, retroactively withdraw every book, every page I'd ever written. And burn them.

Blood, Bones, and Butter is, quite simply, the far-and-away best chef or food-genre memoir...ever. EVER. It certainly kicked the hell out of my Kitchen Confidential, which suddenly, in a second,! felt shallow, sophomoric and ultimately lightweight next to t! his...th is monster of a book, this--at times--truly hardscrabble life…Blood, Bones, and Butter is deeper, better written, more hardcore, more fully fleshed-out; a more well-rounded story than every sunflower-and-saffron account of soft-core food porn in France. It's as bullshit and pretense-free as AJ Leibling--and at least as well written, but more poignant, romantic--even thrilling.

It makes any "as told to" account of famous chef's lives look instantly ludicrous and bloodless. I've struggled to think of somebody/anybody who's written a better account of the journey to chefdom and can't think of anyone who's come even close.

Writing a memoir of one's life as a chef--or even writing about one's relationship with food--has, with the publication of this book, become much more difficult. Hamilton has raised the bar higher than most of us could ever hope to reach. This book will sell a gazillion copies. It will be a bestseller. It will be an enduring classic! . It will inspire generation after generation of young cooks, and anyone who really loves food and understands the context in which it is best enjoyed, NOT as some isolated, over-valued object of desire, but as only one important aspect of a larger, richer spectrum of experiences. Each plate of food--like the menu at Prune--is the end result of a long and sometimes very difficult struggle.

Read this book and prepare to clean your system of all that's come before. It's a game-changer and a truly great work by a great writer and great chef.
